Does adding small blades to the back of jerk baits really help
or are they just a way to sell more of the same?

I think there are days where it will help and I think there are days where it doesn't matter at all. I would compare it to sucker fishing with a teaser tail on the sucker. There are days where the sucker with the teaser tail gets all the action and there are days when the bare sucker gets all the hits. Hard to say why one day they want bling and other days they don't.
